It is the beginning of October which means literally everything is made of pumpkins. Everyone's favorite gourd makes up half the freezer section products at Trader Joe's, is in all baked treats imaginable and of course takes over your latte. Pinterest should probably give the pumpkin an award as it's most inspiring vegetable. I, of course, shamelessly fall victim to any kind of pumpkin treat every year. Recently, I discovered one of my new favorite cupcakes: the Jack, at Dallas cupcake shop and food truck, Trailer Cakes. It is so incredibly simple and delicious: pumpkin cake with a cream cheese frosting and a candied pecan. The perfect reminder that you don't need to get fancy when it comes to this fall staple.
